There’s a moment that still surprises me no matter how many events I handle in my Italian catering business in Los Angeles.

I run a niche Italian catering business in Los Angeles. We specialize in authentic Italian pizza catering, real traditional recipes, and a very hands-on personal way of serving events.
We are a fully Italian team, and everything we do comes from real culture, real food, and real experience, not mass production.
And yet somehow, we keep getting these calls for high-end events, private villas, production sets, and luxury catering experiences across Los Angeles.
Netflix trusted me to feed the cast of Devil in Ohio. I took part in events connected to Will & Harper, and I found myself in a yard where I even met Will Ferrell, an actor I had admired since Zoolander. I worked with Prime Video, Hulu, and production teams that operated at a very high level in the entertainment industry.
But no matter how many of these moments happen, nothing prepares me for that specific call….
Because when someone at that level of wealth and access chooses me, it does not feel like just another booking. It feels different in the body. The tension rises immediately. Not fear exactly, but responsibility. Awareness. Everything becomes sharper.
I listen to their requests and I stay completely professional, but my thoughts start running ahead of me. How do I make this perfect? How do I match expectations that could be met anywhere in the world by anyone? How do I take something simple like pizza and Italian food and turn it into an experience that feels effortless for them but perfect in every detail?
I never doubt the quality of my food. That part is solid. That part is real. But I also know that when someone like this calls me there is no room for distraction. Every detail suddenly matters more. Timing, temperature, service flow, the oven, the rhythm, the team, everything in luxury catering execution becomes critical.
Then comes the preparation.

Then it starts…..
Guests arrive in waves. Orders begin. The rhythm takes over. Pizza after pizza, movement after movement. At the beginning I feel everything very intensely, the heat, the timing, the pressure, but then something always happens.
It flows…..
The system becomes natural. The tension I carried for days slowly starts to dissolve into action. I start seeing people reacting, tasting, smiling. I see surprise in their faces when they try authentic Italian pizza catering, something simple but completely different from what they expected.
And I keep going….
Because in my head I am still not relaxed. I am still waiting for that final moment, that final judgment.
At the end of the event, when things start slowing down, the client comes back. That moment is always the most important one. I stop everything internally. I listen.
When they tell me it was perfect, when they thank me, when I see that the luxury catering experience met their expectation or even went beyond it, that is when everything inside me finally releases.
Because it was never about the money. Not even about the scale of the event. It is about something much more fragile than that, trust. Someone who could have chosen anyone in the world chose me, an Italian catering business in Los Angeles.
And what stays with me the most is not the name, not the status, not the setting. It is the faces.
People tasting real Italian pizza, sometimes for the first time in this way. That moment of recognition. That small pause where something familiar and new meet at the same time.
That is the real reason I do this…..
And every time I get that call, every time I hear that voice on the other side, I still feel that same question rise quietly inside me.
